So after reading many salavatory-response provoking entries from [livejournal.com profile] thatliardiego about the tasty, savory treatment animal flesh recieves in his smoker, I decided to try it for myself. As I only have a gas grill and no smoker, I sought his advice, and lo: today I attempt ribs. Hickory chips, soaked in a belgian wheat beer, with more of the same as a 'water' pan. I found a beautiful rack of ribs, came up with a nice dry rub for seasoning, and we're off. I'll have to post later and let everybody know if it turned out well, or if I end up taking the wife out to dinner!
